French Toast Casserole

1. Cut bread into bite sized pieces and drop into a greased 13X9 inch casserole dish.
2. In a bowl whisk together eggs, milk, maple syrup, vanilla, cinnamon, nutmeg and salt. Pour over bread.
3. In a small bowl mix together brown sugar, cinnamon, grated butter. Sprinkle this mixture over the top of the casserole.
4. Cover the casserole with tin foil and allow to rest in the fridge for 2 hours or up to overnight.
5. After the casserole has set, place into an oven preheated to 350 F and bake covered for 25 minutes. Next, remove tin foil and bake for another 20 minutes or until the top is nice and golden brown.
6. Remove from the oven, and serve with whipped cream and maple syrup.
